Serves 4

BUFFALO MILK, 
CULTURED WITH ROSE

1 q buffalo milk
30 g milk powder
82 g yogurt
14 g white petals

  1. In a large pot, whisk milk powder into the buffalo milk then place over heat.

  2. Add rose petals and bring up to 180°F. Once the temperature has reached 180°F, remove from heat and steep for 10 minutes.

  3. Place mixture into ice bath to cool to a temperature of 110°F.

  4. Strain the mixture, add the yogurt, and then pour into a container. Place in the proofer at 96°F.

  5. Allow to culture for 24-48 hours before hanging over a cheese cloth for 2 days. 

ROSE WAFERS

Damask rose petals
Egg white

  1. Brush each side of the rose petals with egg whites.

  2. Place in a bowl with sugar to lightly coat each side.

  3. Wrap a dehydrator rack with plastic and place the coated rose petals on the rack.

  4. Dehydrate at 125°F for 12 hours.

  5. Store in a container with dessicant packs.
